Why Roasted-to-Order Coffee Actually Tastes Better

Here's the part of the coffee business most brands don't advertise: roasted coffee has a clock on it. From the day beans come out of the roaster, they start releasing gas and aroma and quietly going flat. Peak flavor lives in a window of about 2–4 weeks after roasting. After that, it's a slow slide into "fine, I guess."

Where Shelf Coffee Loses

Most coffee you can buy has been roasted weeks or months before it reaches your kitchen — roasted in bulk, warehoused, shipped to a distributor, shelved, and finally bought. Every handoff burns more of that flavor window. By the time it brews, you're tasting what the coffee used to be.

How We Do It Instead

Every bag of Gun Powder Grinds coffee is roasted to order. We don't roast until you order — which means your coffee never sits on a shelf for weeks or months, and it arrives inside its peak window instead of at the end of it. It's small-batch roasted for the people who depend on it most: long shifts, early mornings, and nights when staying sharp isn't optional.

Getting the Most Out of Fresh Coffee

  • Use it in the window. Aim to brew within 2–4 weeks of the roast date for peak flavor.
  • Store it right. Airtight container, cool dark place. Keep it out of the fridge and freezer — moisture and odors dull the flavor.
  • Buy whole bean when you can. Grinding right before brewing keeps the aromatics in the cup instead of in the air. Ground coffee goes stale faster, so order ground in sizes you'll use up.
  • Order on a rhythm. A monthly subscription (save 10% on every order) keeps fresh coffee arriving right as the last bag runs out.
