Our beans come from growers in these regions who use traditional methods—fully washing and sun-drying their coffee to preserve the bright, clean flavors. Grown at 900-1000M in clay mineral soil, these heritage varieties develop the chocolate, cinnamon, and green apple notes that make Mexican coffee so special. We roast them in small batches to a perfect medium, highlighting the natural brightness.
